Easy Baked Jambalaya
This easy jambalaya is baked in the oven. (Gasp!)
Ingredients
1 small onion (or 1/2 of a larger onion), chopped
1/2 - 1 green pepper, chopped
1 celery rib, chopped
½ cup butter - 1 stick
2 cloves of garlic - or 1/2 teaspoon garlic powder
1 lb. smoked sausage, cut into slices
2-2 ½ cups of cooked, chopped/shredded chicken
2 cups long grain rice
3 cups chicken broth
1 cup chopped tomatoes, or canned diced tomatoes (w/juice)
1 Tbsp. Worcestershire sauce
1 Tbsp. Tabasco sauce
1 Tbsp. browning sauce (optional)
1 tsp salt
1 tsp. pepper
Instructions
In a skillet, sauté onion, green pepper, and celery in butter until crisp-tender. Add garlic. Sauté 1 minute longer.
Optional step: puree tomatoes in blender.
In a greased 9 x 13 baking dish, combine all ingredients.
Cover tightly with foil and bake at 375 for 50-60 minutes, or until rice is tender.
Stir before serving.
